"We discovered Le Belvedere in Bozouls by chance, as a result of wondering what the Trou de Bozouls might be. This in itself is well worth a considerable detour, one of the natural wonders of the world. Anyway, the food ambience and welcome of the restaurant knocked our socks off. Since then, we have been back pretty much every year and have never been disappointed. The cooking is extremely accurate and extraordinarily well judged, and of its type I would say among the best I have tasted anywhere in the world. We go for lunch, where there is a simple menu with no choice, but many courses and even with wine, aperitifs and coffee cost less than 50 euros per person. Don't go if you want to choose. Don't expect hearty portions of peasant food. On our last visit, the meat was mainly fish pollock and cod and was delicious. Lots of very lightly but perfectly cooked vegetables, with occasional flashes of herby flavours. The welcome is flawless, and service extremely pleasant and efficient. The dining room has a lovely feeling of space and light. Large parties need advance booking so that the tables can be properly arranged; this is not a sardiney place. (Though we have had delicious sardines here as part of amuse bouches). Altogether, in my opinion, one of the great restaurants of the world, and fortunately for us, little known!"

"We arrived here without doing our normal research. The restaurant was empty when we arrived but soon filled up with mostly locals, which is always a good sign. We had the gourmand menu, 35 euros . You can have frog legs or snow snails. I stuck to fish, my husband had the foie Graz, followed by the beef. All excellent. F or pudding I h as d the Cafe Gourmand a bit of everything, plus cafe. The 'll e Mon sorbet was to f ie f2f or, creme brulee, fabulous. Great for all th family."

"Its taken me a year to figure out where we ate one of the most amazing meals on a trip to France. This little restaurant in a town between Millau and Rodez is magnificent. They didn't speak one word of English, and the place was packed with locals, a couple of people clearly having their weekend family dinner.... I had no expectations. Instead, on a slab of wood, the best prepared duck of a lifetime.... to die for. We had wonderful salads, a beautiful stew..... but the duck. I will remember it till my last days. Just when I thought I was as happy as could be, they brought us the dessert that was part of the menu for that day a mix of berries, strawberries, liquor, cream and subtle spices. Simply magnificent. If I am ever in this part of France I will go to Laissac just to eat here again. One of our most enjoyable meals in 20+ years in Europe. Maybe it was a lucky night..... maybe not. WE shall see....."
