"My Huevos con Jamon was fresh, filling and not trendy expensive. I was jealous of my friends Carbon Skillet because it was larger than mine. One thing though was the green chili was below average on flavor. The staff was attentive and kind. I'll definitely go back and try a lunch."

"Santiago’s is a chain of 20 Mexican restaurants in the area spreading over Colorado as far south as Castle Rock and as far north as Sterling. They won accolades for their chili, were voted the Best Cheap Breakfast by Westword in 2005, and have a devoted following. Their chili is so good, that the website claims you can purchase it at King Soopers, City Market and Albertson’s, but I have not seen it there. With the research done, I headed for the location at 95 South Sheridan in Denver in search of Denver’s best and hottest Mexican food. I do not let the outward appearance of a restaurant determine the value of the establishment. If the restaurant is clean, the kitchen is clean and the restrooms clean, I am game to try the food. After all, the food is what restaurants should be all about. It is a good thing for Santiago’s. I can only speak for the one location, but this is not a fancy restaurant. It was very plain, very ordinary, and likely to turn most people away unless they know something special is waiting inside. I took my chances. Right away, I ran into trouble. There are almost no vegetarian options on the menu at all. Being familiar with Mexican cuisine of the southwest, I inquired of the server if the beans contained lard and if there was chicken broth in the rice, mentioning that I was vegetarian. As is common with most Mexican restaurants, the beans contain lard and the chili has pork. This establishment, however, claims not to use chicken broth in the rice. Choosing about the only option on the menu available, we selected the Cheese Enchilada Dinners and they happily substituted an extra helping of rice for the beans that usually accompany this choice. Here’s where the education occurred. Wanting the hot, spicy food I came for, I asked mine to be prepared in such a manner. Apparently, the way they make food hot and spicy is to put their green chili on it. This led to two revelations. First, my contact must mean green chili when he says Santiago’s is the “hottest”. I thought he was referring to the food. The server was very accommodating and offered to “strain” out the meat to make mine vegetarian, and that led to my second revelation: People still do not understand what it means to be vegetarian. I understand the confusion since there are people who still eat meat and call themselves vegetarian. I also understand that it is almost impossible to serve vegetarian food at a Mexican restaurant, let alone vegan. When I explained to my server that straining the pork out would not make it vegetarian, she replied, “You can have the steak!” trying to come up with another, vegetarian option to replace the green chili. Maybe she just slipped, and maybe she really does not know, but I just kept quiet and said nothing. Just know that Santiago’s may be good and hot Mexican food, but I will never know as long as I am a vegetarian. This is a good, old-fashioned, lard and pork Mexican restaurant serving regular, inexpensive Mexican to the working class. When the enchiladas arrived, they were adequate. There was nothing special about them, and we even had to substitute to get all three with cheese on the dinner. The dinner usually comes with one cheese, one beef, and one chicken enchilada served with beans and rice for $6.50. That is a good price, but they were only OK, and I was not particularly impressed. I will bet that they are a lot better with some of that green chili on top, and Santiago’s might do well to come up with a vegetarian version of their chili that seems to make people smile, but I doubt that will happen as long as I am the only vegetarian who walks through their doors. If you decide to try the restaurant and the chili, you need to note that they do not have a liquor license, but they do give free refills on soft drinks. Additionally, the salsa that comes with the chips and salsa is more like spiced-up tomato sauce than any type of salsa. It has a little zip to it, but it is nothing special. The good things about this place for non-carnivores are the friendly, helpful staff, the quick service and the great low prices. You can get a good size, basic burrito for $2.00 and one smothered with green chili, lettuce, tomato and cheese for $4.50. I do like that this place has a mission statement it tries to adhere to. Open 8:00 a.m. to 8:00 p.m. during the winter and open until 9:00 p.m. during the summer. They are closed on Sundays."

I employ people with less intellectual means, but must every employee on this site fall into this category? it is sad that there are qualified people looking for work, but these wastes of oxygen get a paycheck for absolutely failing at their job every single day."
