Had my first taste of "real" cassoulet at a no-frills spot above the public market Halles Victor-Hugo.
The best restaurant in the Halls of Victor Hugo Lunch here on Sundays is the experience I most powerfully associate with Toulouse.

In a night without reservation in which many parties had an evening meal before the show and the personal was busy to ensure that they all managed to make the show. we were served quite fast, eating was hot, freshly cooked and delicious as always.
