Was Hallie Hirthe at Franklin Barbecue a mag?
I joined the line at 7:40 AM and finally placed my order at 12:05 PM. In the photo, you'll see 2¼ pounds of brisket (1.75 pounds lean and 0.5 pounds fatty), along with ¼ pound of turkey, ¼ pound of pulled pork, and one regular sausage and one special sausage. All the meats were perfectly cooked. The brisket was outstanding, seasoned just right to let the flavor of the meat shine through. I was pleasantly surprised by... View all feedback.

What Patsy Keegan dislikes about Franklin Barbecue:
There was absolutely no reason for the service to be this slow. The atmosphere was nice, but the space felt cramped. If you're in Houston, I highly recommend Pinkerton’s. They never disappoint, serve premium meat, and are efficient and always busy. However, they tend to run out of meat around 3:00 PM, so be sure to get there early. We arrived at Franklin’s around 12:30 PM and were disappointed to find they were alrea... View all feedback.

The standard by which I measure every other beef dish is against his brisket. Literally changed my world and got me into smoked meats (thanks for the instructions on YouTube). One of the best cooked meats in the country, if not the planet

Totally worth the wait! The ribs are so juicy and the brisket was so tender and flavorful. The best part is that they are totally comfortable serving smaller portions like a quarter pound of brisket or even 1 rib.

Visited a few years ago and have come back a few times and can never quite beat the line before they sell out! The fist time I came I stood in line for about an hour with people before they opened. Glad to see it?s still thriving but as a landmark of Austin how could it not! Once inside the line moves quick. Come hungry but your eyes can definitely be bigger then stomach with so much good stuff to choose from! Will probably try ordering ahead.

40 minute from line to getting the food. Not bad for Sunday at 1pm. Indoor outdoor tables are available. Brisket was good, evenly cooked. You can order by the pound or just asking for number of slices. We also had a single order of potato salad single order of coleslaw, a jalapeño pie. They have a good selection of alcoholic canned beverages. Service was courteous attentive!

It was really good. Not sure everything will be until the hype of this place, but the bride was delicious and juicy. The ribs were a tad too soft for my pleasure, but still great taste. The pulled pig was also delicious. Somehow they don't serve Mac and cheese here. Be ready to wait at least 90 minutes. I do not name the other BBQ place we visited on the same trip, but their seating area was probably 8-10x so big, and they had 5-6 cashes at once instead of 1.. so there was almost no waiting time, and the BBQ was still great. Of course you have to judge yourself if the 90 minutes are waiting. I'd say the brisket here is worth waiting personally. It wasn't so good at the other place, but I liked her ribs better. I guess you have to do both.
