Here's the recipe: EQUIPMENT: Scale Stand Mixer Parchment Paper Roasting Pan Pizza Stone Brush INGREDIENTS: 200 g Active Starter, half whole wheat and half white, 100% hydration 300 g warm water ~85 F/ 29 C 347 g All Purpose Four 398 g Bread Flour 80 g Canola Oil 60 g Honey 16.5 g salt 4 Egg Yolks Golden Flax Seeds, Pumpkin Seeds, Hulled Sesame Seeds, and Black Sesame Seeds Egg Wash Combine ingredients in a stand mixer, starting with the water. Mix on low until everything is incorporated, about 5 minutes, then mix on high until the dough becomes shiny and fully pulls away from the walls of the bowl. It can take a long time, I mixed this one on high for about 25 minutes, but this will eventually happen Once the dough is finished, remove it to a lightly oiled container and proof at 85 F/ 29 C for 3 hours. I accomplished this by putting the dough on top of a radiator, with the dough covered by a garbage bag Once the dough has risen, turn it out onto a lightly floured table. Divide the dough into eight pieces at 165 grams each. Gently shape the dough into nice braids. You really need to have the braids at an even thickness and length for the final dough to look good To apply the seeds, set up 4 small plates with each containing the different seeds. Place a damp cloth on a plate, and roll the braid on the cloth to evenly apply moisture before rolling the braid in the seeds. Repeat for each braid Put a large piece of parchment paper in your roasting pan. Braid each loaf and gently place them on the parchment paper Cover the roasting pan and proof at 85 F/29 C for 3 more hours. An hour before baking, preheat the oven to 410 F/210 C with the pizza stone inside. When ready to bake, gently apply egg wash to the outside of each loaf with the brush Place the roasting pan on the pizza stone and bake for 30 minutes. Open the oven and rotate the pan before baking for another 15-20 minutes, until you achieve the right color. Notes: Next time I'm probably gonna add more starter, salt and a bit more honey to this. It was a little on the dry side and didn't have a lot of flavor, but it was easy to braid and the appearance was correct.
