When it’s done correctly, the crusty French bread to sop up all the leftover sauce is just as important as the shrimp. What exactly defines New Orleans seasoning? I usually use head-on, unpeeled shrimp for this because the flavor you get from the shells and heads is unbeatable. BBQ shrimp is a staple of NOLA cuisine, no doubt.
