First ever try at making sushi. Quite fun, and the quick pickled ginger was really great touch!

Was *a really great touch Anyone have any pickling recipes for ginger they like? I just used water, white vinegar, seasoned rice vinegar, and a fat pinch of sugar. Came out great, but wondering if there are any better ideas out there

That rainbow roll (?) is massive and I am here for it.
